I suggest you ...

Option to choose what apps to backup (and or data of the app)

In addition to manually choosing folders, I would like an option where I can just choose the apps I would want to backup (and or the app data). I could use Helium for this, but Helium does not sync, it only overwrites.

For a non-rooted Android phone how can I sync apps in apk format?...
        Thank you!

Yes! A wizard that leads the user in the steps to connect FolderSync to the companion app's data directories. The wizard could have a list of common apps with their default directories (folders) that would need to be synced. For example for the ODK Collect Android app there would be two folders that would be suggested to be synced.

This doesn't need to happen, if you have root, then it can already do this by enabling root mode and specifying the /data folders. You can also use adb to perform a backup and backup that file to wherever you want as well.

Yeah, and Helium does not allow scheduled backups with locked screen.
